I just downloaded a handy application called Piezo that is a simple audio recorder for just about any application on your computer. I specifically downloaded it to use with Skype and paid the one time fee of $15.00 so that I could have unlimited recording. There is a free version that allows you to record up to 10 minutes at a time before adding noise over the recording. I needed the full version to record interviews so that I could return to them and take notes. Below are some screen shots of the application which is extremely simple and takes no time to learn.
